What you need:
•125ml cake flour
•1.5kg beef thick rib, cut into 3cm pieces
•vegetable oil, for frying
•250g diced bacon
•3ml cayenne pepper
•375ml warm beef stock
•500g baby onions, peeled
•3 potatoes, peeled and cubed
•4 carrots, peeled and cut into 3cm pieces
•2 handfuls green beans, tailed
•410g tin chopped tomatoes
•2 garlic cloves, crushed
handful parsley, chopped
•rice, to serve
Season the cake flour and dust the beef in this. Heat a splash of oil in a pot over prepared coals and brown the beef and bacon in batches. Stir in the cayenne pepper and season. Add the beer (if using) and stock, cover and cook for about 1 hour until just tender.
Top with the onions, potatoes and carrots and cook for about 30 minutes. Top with the green beans. Mix the tomatoes, sugar and garlic together and pour over the beans. Cover and cook for about 15 minutes until tender. Sprinkle parsley over and serve with rice or bread rolls.
